1/2 way there

I’m two weeks into my “no eating out for 30 days” goal and I feel fabulous. I haven’t ‘cheated’ once. I might go for 60 days and beyond. My body is not exhausted from trying to digest all the junk I had been eating before and I have more energy than ever.

My afternoon went like this:

Get the kid off the school bus
Drive him to his after school program
Work for two hours
Pick him up from after school program

It’s now 5:30, I planned nothing for dinner and I still have an hour of work at home to do.

Instead of drive through or take out, I went to the grocery store.

For $15 I purchased:

4 heads of broccoli
3 zucchinis
1 red pepper
2 big winter squash
3 pounds of grapes

I quickly cut, sliced, chopped the first three items and tossed them in a pan with a dash of olive oil, some hot peppers, half  an onion and two carrots that I had at home and made a delicious stir fry dinner in under 20 minutes.

Now, I have squash and grapes as “leftovers”. Squash bisque for dinner tomorrow and grapes for snacks all week.
